A Margarita and Fajita Feast

Mexican food is really good. We used to go to Tortilla Coast about every six weeks when we lived on Capitol Hill. It was barely two blocks from our house. We haven’t been to a restaurant since March 13. But we lately have had Italian, Greek, and Persian food delivered from our favorite restaurants. Sometimes you need a break from home cooking and support the businesses in the community. Since we haven’t yet found a Mexican restaurant in our new neighborhood, we decided to make our own - including a margarita. This time we crushed ice to the bottled Cayman Jack margarita to make more of a smoothie rather than just pour it over ice cubes. It was good, but next time we’re going to add in frozen strawberries. We had salsa and chips as an appetizer. Then my husband went to work on making the chicken fajitas. Along with that was rice, refried beans, and corn. One of these days we will need to try a restaurant, but this home cooked meal was a real treat.
