Cayman Jack Strawberry Margarita

The only time we drink margaritas is when we have a Mexican dinner. We used to walk to Tortilla Coast when we lived on Capitol Hill. We haven’t been to a Mexican restaurant for quite some time. Luckily my husband is really good at making chicken fajitas and we always order salsa, tortillas, refried beans and Spanish rice to have on hand when groceries are delivered just for this reason. After searching around for margarita mixes, I found Cayman Jack bottles that would serve our purpose better. The first time we had the margarita we just poured the contents over ice. It was okay. The second time we crushed ice and the drink in a blender - a good reason to use the blender! It was better. Yesterday we put frozen strawberries in the blender and added in the Cayman Jack. What we ended up with was a “smoothie” of sorts that was more in line with what we used to always drink at the restaurant. It was the best - except my husband needed to add a couple of ice cubes to keep it cool. I think the next time I’ll put in more strawberries to make it even thicker. So the drink yesterday replaced our usual half glass of red wine. It went really well with the scrumptious food.
