Bill Ellis Barbecue and Chicken

The Truckers Association near our home frequently has events and catering for these events. During the summer the umbrellas on the rooftop are opened to protect the guests from the heat, but also affords a view of the Capitol. Today there was a very large white and red truck parked by the building that caught my attention. I have never heard of Bill Ellis Barbecue, but there it was, preparing what looked to be a lot of food for somebody or something special. So I looked it up to find that Bill comes all the way from North Carolina. Interesting, because the truck was parked on a street by the same name. It is not unusual to see roving food trucks in the neighborhood, but this one takes the cake - or the pig. Our daughter in law has written stories about barbecue for travel magazines. I wonder if she has ever heard of Bill's? You can't miss it!
