Air Fryer Chicken Quesadillas

We got an air fryer a few weeks ago and have been experimenting with it. Tonight we plan to fry the frozen French fries we made yesterday. The potatoes were cut, kept in warm water for thirty minutes and put in the freezer. It will be the first time trying the French fries option. We made an extra trip to the grocery store to get a chicken breast, salsa, tostitos, and red beans and rice for a quesadilla dinner. First we needed to cook the chicken breast - which is probably the easiest thing to make in the air fryer. Then we used the new digital food thermometer to make sure it was cooked. Then the chicken was shredded and the quesadilla process began. You put the tortilla in the cooker, top it with cheese, add the chicken, add another tortilla, use a couple of toothpicks and start the air fryer. It needs to be turned halfway through which can be a tricky thing but we used a very large spatula. Because our air fryer is small it’s a matter of making one, cutting it in half, eating, prepare another one and redo it all over. We have decided we need to move the air fryer to where we are sitting on the island so we can eat and cook at the same time. Otherwise it’s up and down and not very pleasant! We didn’t like the rice and beans, and the tortilla was too crispy. This was an experiment that went okay, but not one of our favorites. We have a lot more recipes to try. This one will go down to the bottom of pile. And if the air fryer is supposed to be healthy, I’m it so sure this food is - too much salt and processed cheese.
