Pork Chop with Cheddar Potatoes and Broccoli

Every once in a while I come across a recipe that looks interesting. Since we haven’t been out to dinner for over two years, we either do pick up or cook ourselves. My husband does all of the cooking and it is always the best. But every once in a while it’s worth trying something new. He cooks without recipes. I have to have one. I also love casseroles and things made all at once. We recently tried a shrimp casserole that has become a regular meal. This new recipe called for pork chops - something we like every so often. We aren’t really big meat eaters anyway, but really like broccoli and potatoes of any kind. So this week we got all of the ingredients for this and a chicken dish we want to try. The interesting element for this dish was that it called for low sugar barbecue sauce, and cheddar cheese. We got the broiler pan out - to use the bottom half covered with olive oil - and filled it with a single layer of the four thin pork chops, oil covered inch sized potato cubes, and four cups of broccoli. It was all seasoned with salt and pepper. That was put in the oven for thirty minutes. Then the cheddar cheese was added to the potatoes and broccoli and barbecue sauce was added to the pork chops and put back in the over for 3-5 minutes. We really didn’t know what to expect and were pleasantly surprised by the variety of tastes. The nice thing is that we have enough for another dinner tonight. These types of dishes making thinking about what to make for dinner so much easier. And it actually tasted great.
